Ingredients for 2-4:
12 oz (340g) asparagus
1 tbsp garlic-infused olive oil
2 cups vegetable stock or spicy tea*
12 oz avocado, peeled and diced
Juice of 1 lime
1 tbsp walnut oil**
1 tbsp fresh cilantro
A few walnuts to garnish
salt & pepper to taste
Preheat oven to 425 F / 220 C.
Toss asparagus with garlic-infused olive oil, salt and pepper.
Roast for 10 minutes.
Carefully transfer asparagus to a blender with remaining ingredients, and puree until smooth. Add salt and pepper to taste.
If needed, add water to get a thinner consistency and warm up gently over medium heat.
Serve immediately with a few walnuts. You can also cool it and serve chilly.
*Spicy tea: to give some taste without adding calories, you can add various herbal spicy teas (e.g. ginger-turmeric) that available in different tea distributors, or make your own tea.
** Pistachio oil is a good alternative to walnut oil for this recipe. Sesame oil is great too.
