The perfect foods for a vegan detox soup

Ingredients serving for 4

  • 2 tablespoons olive oil
  • 2 celery hearts
  • 5 scallions
  • 1 jalapeno
  • 2 cloves of garlic
  • Thyme, oregano sprigs
  • 3 cups water or vegetable stock
  • ½ bunch of fresh cilantro sprigs.
  • 1 Organic lemon
  • 200g of avocado meat or 1 medium avocado
  • ½ cup plain yogurt optional
  • 50 g of shredded Parmigiano Cheese optional

 

 

Instructions

  1. Peel and mash the garlic
  2. Wash, dry and the slice the scallions
  3. Seed and slice the jalapeno, wash and take the herbs
  4. Wash and mince the celery hearts
  5. Heat the olive oil in a medium-size pot on medium-high heat, add the scallions and the jalapeno.
  6. Add celery and garlic, fresh leaves herbs and a fine zest add ½ lemon juice.
  7. Stir the vegetables until tender, about 5 minutes.
  8. Add the water or vegetable stock and bring to a boil. Reduce the heat, add fresh leaves herbs and a fine zest plus ½ lemon juice.
  9. Simmer for less than 10 minutes, until the vegetables are soft.
  10. In a small blender add cilantro leaves, ½ lemon juice, diced avocado and yogurt, blend to get a creamy mix.
  11. When the soup is cooked use a hand blender to cream it nicely.

  14. Add a large spoon of the cilantro-avocado mix and serve immediately.
  15. Add salt and pepper to taste

This soup can be served hot or cold.

Celery and avocado preventing gout and more

Soups are good to detox, hydrate, charge in minerals.

I avoid adding salt when cooking to prevent high blood pressure and in this recipe the function of the celery.

I just add some salt to adjust the taste. Apparently, this helped me to prevent high blood pressure when aging.

Celery (Apium graveolens) is traditionally used to treat rheumatism and cardiovascular disorders since memory. Hyperuricemia is considered as a predisposing factor for gout and is also suggested to be associated with coronary artery disease. Study results demonstrated that celery could reduce the serum uric acid level via inhibition of hepatic XDH/XO and indicated its potential utility as an effective hypouricemic bioactive agent or functional food.

Ingredients for 1 serving: emory 

  • 1/4 cup steel-cut oatmeal
  • 100g meat avocado (½ large size)
  • ½ fennel bulb
  • 1 lime
  • 4 twigs parsley or cilantro
  • 2 twigs of mint
  • 1-inch long fresh ginger
  • 1 cup water or tea
  • 1 tsp of honey or maple syrup optional

Directions:

Peel and dice the avocado. Clean and dice thinly the fennel bulb. Peel and dice thinly the ginger. Clean the parsley, keep just the leaves.

Set all in a blender add the oatmeal, the lime juice, the water, and the honey. Blend all and enjoy few hours of energy without feeling hungry.

Cook Steel-Cut Oats & Freeze Them

I like the chewy texture and nutty flavor of steel-cut oats. Steel-cut oats are made from the whole oat, cut into small chunks.

Oats are whole grain, it is rich in vitamins, minerals, and fiber. Steel-cut oats take longer to cook, the health benefits and flavor are worth the extra time. I use the Irish technic to soak them before to go to bed and just set the heat at 1, I increase at 2 when taking my shower a few minutes, and they are ready to use.

I can also make a large batch and freeze it into the individual portion for quick reheating.

Step 1

Bring water to a boil in a large saucepan, then stir in the steel-cut oats. I use 2 cups of water for a ½ cup of steel cut oat when I soak and cook overnight, I use 3 cups of water for 1 cup of oats when I prepare a batch to freeze.

Step 2

Reduce the heat to “Low” to bring the mixture to a simmer. Cook the oats for 20 minutes. For softer oatmeal, cook the oats for up to 30 minutes.

Step 3

Spoon the oatmeal into a serving-sized container, and put the container into the freezer.

I used also to make ice cubes more often with spice adding to soups and smoothies. This gives some consistency and keeps the preparation healthy, it is also a way to feel full with low calories intake. Once frozen, pop the cubes from the tray and transfer them into a container. One cube is just right for a toddler and two to four cubes for an adult.

Step 4

Defrost frozen steel-cut oats in the microwave or through them in your preparation, to cook or to blend as for a smoothie
